Coffee Cake from Lil’ Luna
God has blessed me with an assortment of gifts, but creating recipes from scratch isn't one of them. There are meals I make without a recipe, but they certainly couldn't be written in a traditional format. They're the kind of dishes you learn by watching me cook.
If I tried to write one down, it would probably read something like: "Add the minced garlic, maybe one or two tablespoons, depending on how much you like garlic. Next, add a pinch of cayenne pepper...or maybe a teaspoon. Whatever feels right." I learned to cook by watching my mom, who learned from her mom before her. My husband says he loves watching me in the kitchen because I'll pick up a spice bottle, give it a few shakes over the pot, pause to think, and then add a few more. It may look like there's no method to my madness, but there is. It's just my own way of doing things.
Because of that, I rely on trusted cookbooks and favorite food blogs when I want a recipe that's been carefully tested and written down properly. Today's recipe comes from one of those trusted sources. This coffee cake is incredibly easy to make and always receives rave reviews wherever I take it. It's become a staple for church breakfasts and potlucks. Moist, flavorful, and topped with just the right amount of sweetness, it's absolutely wonderful. If you can serve it warm, even better! It never lasts long in our house. When I bake it for breakfast, it's usually gone within two days.
The recipe comes from Kristyn Merkley, the talented home cook and baker behind Lil' Luna. Her site ranks among my top five go-to recipe websites. Honestly, every recipe I've tried from Lil' Luna has been a success with family and friends.
My husband never cared for coffee cake, until I made this one. Now he looks forward to it whenever I bake. If you're searching for an easy, well-written recipe that delivers a deliciously moist coffee cake, this is the one.
Now that I've spent all this time writing about coffee cake, I've given myself a craving. Time to head to the kitchen and start baking!
Peace,
B
